Simple Beef Stroganoff


Time to share my mom's famous Beef Stroganoff. My sister and I still fight over who makes it best, and of course my mom insists it's still her. (but just between you and I, it's me) It's easy and quick. Throw in a side dish of green beans or a salad, and dinner's done. Follow along. 


Ingredients: 
1 lb lean hamburger
1/2 large onion
8 oz sliced mushrooms
1 can cream of mushroom soup
10 oz. bullion or beef broth
1 cup sour cream 
Course ground pepper and kosher salt
16 oz. wide egg noodles or rice 


1. Boil water and cook noodles or rice while sauce is simmering. 
2. Brown ground beef. When it's half-way there, throw in the onions and mushrooms. Saute on med-low until onions are soft, usually about 10 minutes. 
3. Add in beef broth or bullion and cream of mushroom soup. Stir until blended. Simmer on low for 10 minutes or until mixture is thick and bubbly. If too dry, add a little more broth. 
4. Add sour cream a little at a time until it suits your taste. Too much will make the sauce runny. I usually end up using about 1 cup. Simmer 2-3 minutes. 
5. Add salt and ground pepper to taste. 
5. Pour sauce over noodles or rice and stir to combine. 


Hope this is a crowd pleaser at your house like it is at mine. (and my sister's, but not as much as mine because hers isn't quite as good.)
