The only way I get through when I'm eating low carb is to make meals that fill me up. One of my favorites is to this "green" omelette, full of good veggies and topped with feta cheese.
I like to include spinach, avocado, cilantro, asparagus and green onions.
Cut the asparagus into 1 inch pieces, chop the green onions and saute together with cooking spray or olive oil.
Whip 2 or 3 eggs with 1/2 cup milk and add to the sauteed veggies.
Cook until eggs are about 1/2 way done. Add spinach and cilantro and continue to cook. Remove from heat.
After plating your eggs, add diced or sliced avocado and sprinkle feta or sharp cheddar over the top. Enjoy!
