Jackie's Breakfast Casserole

This casserole will change your life. Perfect for Christmas morning, New Year's morning, Sunday mornings. Make it the night before and pop it in the oven when you wake up. Credit goes to my mother-in-law, Jackie. Definite crowd pleaser.

1 pkg. crescent rolls
4 eggs
3/4 c. milk
1 pkg hot sausage
2 c. sharp or medium cheddar
salt & pepper to taste

Vegetarian option:
1 c. sliced mushrooms
1/2 c. diced onions.

Pre-heat oven to 350 degrees. Lightly grease bottom of glass 9 x 13 pan. Brown sausage. Saute mushrooms and onions if doing vegetarian option. We do 1/2 and 1/2. Whisk eggs and milk together. Lay crescent rolls in the bottom of the pan. Press seams together and press to the edges of the pan to create a lip for the casserole.

Assemble by putting the sausage and mushroom/onion mixture on the bottom. Add egg mixture over the top. Add cheese last. Salt and pepper to taste. Bake for 25 - 30 minutes until eggs and cooked and crust is golden brown.
